2 tbsp. balsamic vinegar

4 huge zucchini

2 c. cherry tomatoes halved

1/4 c. fresh basil leaves

1 c. mozzarella balls, quartered if large

kosher salt

Objectives

1. Using a spiralizer, create zoodles out of zucchini.

2. Add zoodles to a huge pan, toss with olive oil and season with salt and pepper. Let marinate 15 minutes.

3. Add tomatoes, mozzarella, and basil to zoodles and toss until combined.

4. Drizzle with balsamic and serve.

INGREDIENTS

8 bone-in chicken thighs (2 1/2 pounds)
1/4 cup plus 1/3 cup teriyaki sauce
2 bunches baby bok choy, quartered
1 clove garlic, chopped
1 cup long-grain white rice

Objectives

1. In a huge pan, mix the garlic and ¼ cup of the teriyaki sauce. Add the chick, turn to coat, cover, and let marinate for 30 minutes.

2. Cook the rice according to the packaging directions.

3. Meantime, temperature oven to 450° F. Places the chick on a foil-lined rimmed baking layer and roast, cooking with the remaining ⅓ cup of teriyaki sauce, until cooked during, 25 to 30 minutes. Ten minutes ere the chick was done, combine the bok choy. Serve the chicken and bok choy over the rice.

1/2 cup dry red wine or reduced-sodium beef broth

3 cups fresh baby spinach

2 green onions, sliced

6 slices nitrate-free bacon, cut into small pieces

4 (about 1.5 lbs.) boneless chicken breasts

2 cups fresh cherry tomatoes, sliced in half

fresh parsley, or basil for garnish

1 red chili, finely sliced (optional)

sea salt and pepper to taste

1 ripe avocado, sliced

3 fresh garlic cloves, minced

Objectives

1- Boil a heavy skillet up to medium-high heat.

2- Combine in the bacon and cook for about 5 minutes or until the bacon is crispy.

3- Dismiss and set on a paper towel to drain. Set aside.

4- Combine chick into the skillet and bake for 5-6 minutes per side or until cooked through.

5- Season with sea salt and pepper to taste. Transfer chick to a plate and cover with foil to keep heat.

6- In the same skillet, combine in the garlic and cook for 1 minute, until fragrant. Combine in the prepared quinoa, OR rice, fresh spinach, tomatoes, and bacon.

7- Stir to combine, wilting the spinach just a bit. Return the chick to the skillet and nestle in the rice.

8- Garnish with new avocado sliced, chili peppers, and fresh onion.

INGREDIENTS

1 teaspoon fresh rosemary (minced)

Salt & pepper to taste

3/4 teaspoon paprika, divided

 3/4 pound sweet potatoes (small potatoes, peeled, cut into 1/2″ slices)

 12 raw (10 ounces) shrimp ( peeled, deveined)

4 1/2 teaspoons fresh lemon juice

 3 tablespoons olive oil (divided)

Objectives

1- Pre-heat oven 450f and Put your cooked fresh potatoes single layer in an ovenproof dish.

2- Mix 1 tbsp oil. The rosemary and 1/2 tsp paprika. Drizzle over the fresh potatoes. Toss to coat.

3- Roast 25-30 minutes or till they are tender. Stir infrequently. and On 2 metal or soaked wooden skewers alternately string the potato slices & Shrimp. Sprinkle with salted & pepper.

4- Broil 6″- 8″ from heat until Shrimp are pink (approx.7 minutes). Flip them once and Whisk together the remaining oil, paprika & lemon.

5- Spray the lemon mixture over the skewers only before serving.

INGREDIENTS

1 teaspoon cinnamon
Margarine, for coating skillet
2 eggs
1/3 cup sugar
8 slices white sandwich bread

Objectives

1- Trim crust rim, ts from parts of white bread, and flatten bread with a rolling pin.

2- Spread aspired to fill on 1 side of every part of the bread. You could combine cream cheese with fruit, or groundnut butter and banana. Whatever taste blend, Tightly roll up the piece of the bread. Resume for the remaining part.

3- In a shallow plate, mix eggs and milk with a whisk. In another dish, combine sugar and cinnamon.

4- In 08-inch skillet, melt margarine over medium heat to coat inside of the skillet. Dip every roll into the egg mixture, and put in skillet. Cook in groups of 3 or 4, changing until the roll is browned. Dip into cinnamon sugar, and roll until totally covered. Serve immediately.

2- In a small dish, whisk together sweet chili sauce, soy sauce, ginger, honey, garlic, and green onions. Spoon sauce over salmon fillets and bake in the oven for 8 to 8 minutes. Set the grill on and cook for an extra 2 to 3 minutes, until edges of salmon are crisp.

2 cloves garlic, minced
⅓ cup fresh cilantro, chopped
1 top cauliflower (3 cups cauliflower rice
1 tiny jalapeño, chopped (optional)
1 Tbsp olive oil
½ cup onion, chopped
Juice of 1 lime
Salt and pepper, to savour

Objectives

1- Increase the heat to medium-high and add the riced cauliflower to the skillet, season with salt/pepper and cook until cauliflower is soft and tender, about 5 to 7 minutes, stirring frequently.

2- Raise the temperature to medium-high and mix the riced cauliflower to the skillet, season with salt or pepper and cook until cauliflower is smooth and tender, about 6 to 8 minutes, stirring frequently.

3- Take away cauliflower rice from temperature and add in the lime juice and cilantro.

Sun-Dried Tomato Dip

½ tsp celery seed
1 red bell pepper, chopped
½ cup sun-dried tomatoes, without oil, dry-packed
8 oz. cream cheese, softened at room temp
1 clove garlic, minced
½ cup plain Greek yogurt
⅛ tsp cayenne pepper
¼ cup chili sauce

Objectives

1- Put tomato small dish. Cover 1 cup of boiling water and left to stand at room temperature for 8 minutes.

2- Meantime, in a separate pan, mix cream cheese, Greek yogurt and chili sauce, blending well.

3- Combine tomatoes and remaining ingredients. Mix well .

¼ cup Stevia baking blend
One egg
¼ cup agave
1 box mini fillo shells (At least 14)
½ cup chopped pecans

1- Pre-heat oven 350f and Put fillo shells on a prepared baking sheet and load evenly with chopped pecans.

2- In a little pan, whisk together egg, agave and Stevia and pour over tarts, fulfilling just to the head.

3- Bake for 20 to 25 minutes until golden.
